Title: Low Fat Bran Muffins

1cFlour
2tsBaking powder
1/2tsBaking soda
1 Egg
1/2cApplesauce
1 1/4c2% milk
1/3cBrown sugar
1/2tsCimmamon
2cNabisco 100% bran

Heat oven to 400 degrees F. Mix flour, baking powder, baking soda and cimmamon in large bowl. Mix cereal, milk and sugar in another bowl; let stand 5 minutes. Stir in egg and applesauce. Add to flour mixture; stir just until moistemed. (Batter wil be lumpy). Spoon batter into muffin pan sprayed with no stick cooking spray, filling each cup 2/3 full. Bake for 18 to 20 minutes or until golden brown. Serve warm. Makes 12.

this one is from C. Mckenzie FRESH APPLE MUFFINS

3/4 cup sugar 1/3 cup Sunsweet Lighter Bake (I subs. applesauce) 1 egg (or Egg Beaters) 1 1/2 teaspoon vanilla 2 1/2 cups peeled and diced tart green apples (I used Granny Smiths) 1 1/2 cups all-purpose flour 1 1/2 teaspoons cinnamon 1 1/2 teaspoon baking soda 1/2 teaspoon salt 3/4 cup raisins (optional, but you've gotta have raisins!!)

Preheat oven to 350 degrees (F). Coat muffin pans with vegetable cooking spray or line with paper muffin cups; set aside. In large bowl, combine sugar, Lighter bake, egg, and vanilla; mix well. Stir in apples. Combine flour, baking soda, cinnamon and salt; stir into apple mixture. Stir in raisins. Spoon into prepared muffin pans. Sprinkle evenly with STREUSEL TOPPING. Bake 25 minutes or until springy to the touch. Cool in pans 5 minutes; remove to rack. Makes 1 dozen muffins.

STREUSEL TOPPING (didn't use this): In small bowl, combine 1/4 cup sugar, 2 tablespoons all-purpose flour and 1/2 teaspoon cinnamon. Stir in 2 teaspoons Lighter Bake with fork or fingertips to make a fine crumb mixture.
